Food City Certified Angus Beef
Over twenty years ago, the Certified Angus Beef Program was established to increase demand for registered Angus cattle through a program that identifies consistent, high quality beef with superior taste. Food City is proud to be part of the group of 2,500 licensed supermarkets that now offers Certified Angus Beef items in our fresh meat department.
Certified Angus Beef is from Angus-type cattle that has met rigid quality standards based on marbling, tenderness and leanness. A combination of these standards results in superior tasting beef.
The U. S. Department of Agriculture grades beef for quality, with Prime being the top grade and Choice being next. A very small percentage of cattle is graded Prime and most of it is available in a limited number of "white table cloth" restaurants. The Certified Angus Beef comes from the upper two-thirds of Choice carcasses and some even from Prime cattle.
Proper marbling, or small flecks of fat, in the meat is necessary to give the beef its taste, juiciness and tenderness. However, the proper marbling in Certified Angus Beef adds just a negligible amount of fat to the beef. For example, a serving size of regular Choice top round contains 4.6 grams of fat and the Certified Angus Beef top round has 5.9 grams of fat... just a little more than one gram of fat difference!
The marbling and tenderness in Certified Angus Beef can be a real benefit if you like all your beef cooked well done because it helps keep the end product from drying out too much.
Because of the additional grading and selection processes by the USDA and the separation of the product from other products in the whole system, Certified Angus Beef will most likely have a slightly higher price than regular Choice beef.
