TRY CHICKEN STROGANOFF.

 

TRY CHICKEN STROGANOFF.  If you love the creamy sauce of beef stroganoff, but are looking for something different to do with chicken, how about Chicken Stroganoff?  This recipe is from the National Chicken Council. 


Easy Chicken Stroganoff


2 tablespoons butter or margarine

4 boneless, skinless chicken breast halves or 1 pound chicken tenders

2 tablespoons flour

1 medium onion, chopped

8 oz. fresh mushroom, quartered

1-1/2 cups chicken broth

2 tablespoons prepared coarse grain mustard

1/2 cup sour cream

3 tablespoons chopped fresh parsley

2 cups cooked egg noodles


Place butter in a large nonstick skillet and melt over medium heat.  Put flour in a shallow dish, add chicken and turn to coat well.  Place chicken in skillet and cook, turning to brown on both sides.  Stir in onion, mushrooms and any unused flour.  Continue cooking, stirring, about 5 minutes or until onion is golden brown.  In a small bowl, whisk together the chicken broth and mustard; pour mixture into skillet and stir.  Bring to a boil, reduce heat to simmer and cook about 5 minutes more or until fork can be inserted in chicken easily.  Stir in sour cream and parsley; warm through.  Serve with hot egg noodles.  Makes 4 servings.  (I know that egg noodles are traditionally served with stroganoff, but I think this would also be good with angel hair pasta.)
