Toasted Honey Muesli with Coconut & Dried Pineapple

Preparation
- Heat the oven to 160 degrees and line 2 large biscuit trays with baking paper.
- Combine all the dry ingredients in a large bowl and stir to combine.
- You can add more or less of any ingredient but make sure that you have a total of 7 cups of dry ingredients.
- Place all the wet ingredients together in a pyrex measuring jug and heat in the microwave for 1 minute or until the butter is melted.
- Pour wet ingredients into dry ingredients and mix gently till all the dry ingredients are coated with the honey mixture.
- Spread the muesli mix evenly over the two trays and place in the oven.
- Stir every 10 minutes until the muesli looks lightly toasted and the coconut is starting to brown slightly.
- Muesli burns quickly so check often.
- After 30 minutes the muesli should be done.
- The muesli will still be moist when it is hot but as it dries it becomes crunchy.
- To check if the muesli is done or not, place a few tablespoons in a small bowl and put it in the freezer for a few minutes to cool.
- Take it out and taste it see if it is toasted sufficiently.
- When the muesli is done, cool completely and then add the dried fruit and mix through.
- Store in an airtight glass container in the fridge.
- Will keep for several weeks.
