Preparation
- Combine chickpeas, beets (canned or roasted), olive oil, lemon juice, salt and pepper in a food processor.
- Cover and process until smooth, scarping down sides as needed.
- If you choose to use roasted beets, preheat oven to 400F.
- Wrap beets in foil and seal tightly.
- Bake for 45 minutes or until tender when pierce with a knife.
- Cool.
- Use paper towel to rub skin off beets.
- Chop coarsely.
