Sage Stuffing

Herbaceous and fruity, this diabetic friendly twist on the classic sage stuffing make a great holiday side.

Ingredients

Preparation

  • Preheat oven to 375 degrees F.
  • Cut bread into cubes and place in a large bowl.
  • Chop the onion and celery.
  • Remove stems from sage and chop.
  • Place chicken broth in a small saucepan over medium heat to warm.
  • Heat olive oil in a large skillet over medium heat.
  • Add the onions and celery, and sauté for 3 minutes.
  • Add the walnuts and sauté for 2 minutes.
  • Add in the sage and cook for 1 minute.
  • Add the onion-­sage mixture to the bread.
  • Lightly whisk egg.
  • Pour the hot chicken broth and egg over the onion-­sage, and mix well (until moist).
  • Add in the cranberries.
  • Season with salt and pepper to taste.
  • Add to a large casserole dish and bake for 40-­‐45 minutes, or until the top is brown and crusty.
