Preparation
- Soften Neufchatel cheese.
- Drain artichoke hearts and spinach.
- Squeeze spinach to remove as much water as possible.
- In food processor combine artichoke hearts and spinach; coarsely chop.
- Remove to large bowl.
- Add Neufchatel cheese, Parmesan cheese, yogurt, salt and pepper.
- Preheat oven to 400°F.
- Grease shallow 1-quart baking dish or casserole; spoon mixture into dish.
- Bake 15 to 20 minutes until mixture is heated through.
- Serve with crostini or crackers.
