Preparation
- Mince fresh ginger (1 tsp once finished) and garlic.
- Combine brown sugar, soy sauce, mirin, minced ginger, dark sesame oil and garlic together in a bowl and whisk thoroughly.
- Slice sirloin into strips, about 1/16 inch.
- Placed sliced steak into a large resealable plastic bag.
- Pour marinade into the bag and work gently onto the meat.
- Seal and marinate in refrigerator for at least 1 hour (can leave overnight).
- Cut broccoli into florets.* Thinly slice carrots, squash, green onions and cucumbers.
- In a medium bowl combine cucumber, carrot, and 2 teaspoons of salt.
- Add vinegar, water, granulated sugar and scallions.
- Mix until combined and chill until ready to serve.
- When ready to cook heat a large non-stick skillet coated with cooking spray over medium heat.
- Add beef to pan, discarding remaining marinade, and cook for two minutes.
- Stir, then add broccoli.
- Cook 2 minutes.
- Add squash and snow peas cooking for an additional 4-6 minutes, or until meat is desired doneness and vegetables are tender.
- If you prefer to grill, place meat and vegetables in a wire grilling basket coated with cooking spray on grill rack, and grill 8 minutes, turning frequently.
- Serve over cooked white rice (cook according to package directions).
- * To save time use ShortCuts broccoli florets.
- Washed, trimmed and ready to cook.
