Pork Piccata with garlic spinach pasta
Our version of this Italian classic, featuring thinly sliced pork with lemon and capers, is simpler than you would think. This easy-to-make delicious family meal is ready to share in about 20 minutes.

Preparation
- Bring a large pot of water to boil.
- Add pasta to boiling water and cook according to package directions.
- Reserve 1/4 cup of the hot pasta water when you drain the pasta.
- In a shallow dish, such as a pie pan, combine flour, 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Dredge thin sliced pork chops in flour.
- Gently shake off any excess seasoned flour.
- Mince garlic.
- Roughly chop spinach.
- Slice one lemon into rounds for garnish.
- Juice the other lemon, removing all seeds.
- Heat 2 teaspoons oil in a large skillet over medium-high heat.
- Cook pork chops in small batches, for 2 to 3 minutes per side, or until golden brown.
- Over crowding the pan will cause the pork to steam and will not allow the meat to brown properly.
- Remove meat from pan and set aside.
- Add 1/2 of the garlic to the pan and cook until fragrant, about 30 seconds to 1 minute.
- Deglaze the pan with juice of one lemon, about 2 tablespoons.
- Scrape any browned bits loose with a wooden spoon.
- Add chicken stock and drained capers.
- Return pork chops to sauce to warm through and simmer until sauce thickens, about 1-2 minutes.
- While sauce is reducing, heat another large pan with 1 teaspoon of oil.
- Add remaining 1/2 of minced garlic to pan and cook until fragrant.
- Add spinach to garlic and oil cooking until just wilted, about two minutes.
- Season with salt and pepper to taste.
- In a large bowl toss together pasta, Parmesan cheese, reserved pasta water and garlic spinach.
- Divide equally into four bowls.
- Once sauce has thickened, about 1-2 minutes, remove from heat.
- Place the pork chops on top of the pasta.
- Gently melt butter into the sauce, stirring quickly to incorporate.
- Taste for seasoning and add additional salt and pepper if needed.
- Spoon sauce over top of pork and pasta, garnish with lemon slices and serve immediately.
- * Optional, add large pinch of crushed red pepper flakes to spinach while cooking.
