Preparation
- Pre-heat oven to 450 degrees.
- Wash and dry the produce.
- Using a paring knife or vegetable peeler remove skin of the sweet potatoes.
- Cut into 1/2 inch cubes.
- Trim any tough ends from snap peas.
- Drizzle vegetables with a small amount of oil and season with salt and pepper.
- In a large bowl mix together the yogurt and hot sauce*.
- Add chicken tenders to the bowl and toss to coat with the yogurt mixture.
- In a large zip top plastic bag mix seasoned salt, pepper, paprika, thyme, Parmesan and panko.
- Add chicken tenders to bag.
- Seal up bag tightly and mix until the chicken is evenly coated**.
- Repeat process until all of the chicken tenders are coated.
- Place chicken on a baking dish lined with parchment paper, or sprayed lightly with a non-stick cooking spray.
- Mist tops of chicken tenders with a light coating of pan spray.
- Place chicken in the center rack of the oven and bake.
- At the same time, place sweet potatoes on a large baking pan and roast in the oven.
- After 12 minutes remove both pans from the oven.
- Stir sweet potatoes and flip the chicken.
- Add the peas to the sweet potato pan.
- Return both pans to the oven to bake for an additional 10-12 minutes.
- The sweet potatoes will be golden and the snap peas bright green and tender.
- Chicken will be crunchy and no longer pink inside with clear juices.
- If you desire a crispier texture, place chicken under a broiler until breadcrumbs are toasted, about 2 minutes per side.
- Divide sweet potatoes, peas and chicken evenly on four plates.
- Serve with your favorite condiments.
- * Hot sauce can be adjusted to your preferences; add more for a little kick or omit completely for extra mild (This amount adds a little flavor but not much spice).
- ** Depending on the size of the bag, chicken may be added in batches and tossed until all pieces are evenly coated (You may also mix coating in a bowl and spread evenly over all the chicken).
