Preparation
- Prepare Salsa: Drain and chop peaches.
- Drain green chilies.
- Finely chop red onion and parsley.
- Squeeze 1 Tablespoon of lime juice into a medium bowl.
- In same bowl, combine chopped peaches, green pepper, red onion, parsley, lime juice and Tabasco sauce.
- Cover and refrigerate until ready to serve.
- Prepare Tacos: Warm tortillas.
- Drain and flake chicken.
- Fill tortillas with flaked chicken***; top with peach salsa.
- Serve with shredded cabbage and cheese if desired.
- Cut lime into wedges and garnish.
- * Use your favorite style of tortillas; corn, flour or whole wheat **Optional.
- **Substitute 1 (5-ounce) can Food Club Chunk Light Tuna for chicken if desired.
