Baked Fish with Vegetables and Rice
Easy, healthy fish dinner in minutes. Tasty and so simple to clean up afterwards.

Preparation
- Heat oven to 375°F.
- Cut 2 large pieces of heavy-duty foil large enough to wrap each piece of fish and vegetables.
- Spoon 1/3 cup rice onto center of each of piece of foil.
- Fold up all sides of foil slightly to form rim.
- Pour 1/2 cup water over each mound of rice.
- Top rice with a piece of fish.
- Spoon vegetables around the fish fillets.
- Sprinkle the top of the fish and veggies with Italian seasoning.
- Bring up foil sides.
- Double fold top and ends to seal each packet, leaving room for heat and steam to circulate around the fish and rice.
- Place packets in single layer in shallow pan.
- Bake 15 min. or until fish flakes easily with fork.
- Cut slits in foil with sharp knife to release steam before opening packet.
