Sweetpotato Blueberry Baked Oatmeal

Preparation
- Preheat oven to 350°F.
- Wash and dry the sweetpotato, do not peel.
- Pierce it in a few places with a fork.
- Place the sweetpotato on a paper towel and microwave on high for 3 minutes.
- Turn it to the other side and microwave for 2 minutes or until fork tender.
- Be careful when removing the sweetpotato from the microwave - it will be hot.
- Allow it to rest for 2 minutes, then cut in half.
- Coat the inside of a 2-quart baking dish with butter, oil or non-stick spray.
- Mix dry ingredients: oats, cinnamon, salt, baking powder.
- Beat in milk, eggs, 1 cup mashed sweetpotato, butter, maple syrup, and vanilla extract.
- Mix all ingredients together, saving blueberries for last and spread inside the dish.
- Bake for 30-35 minutes, until oats are tender, and moisture has been absorbed.
- Drizzle with maple syrup to taste.
