Blended Sloppy Joes
Blending ground meat with mushrooms adds an extra serving of vegetables to the plate. Mushrooms are fat free, cholesterol free, low in sodium and calories. This powerful pairing can be used for taco filling, spaghetti sauce, or burgers. Recipe courtesy of the Mushroom Council.

- Chop green onion and yellow onion.
- Toss coleslaw mix with the green onion and dressing until well combined; set aside.
- Place the mushrooms and onion in a food processer fitted with a metal blade.
- Pulse until finely chopped.
- Add to a large bowl and mix in ground beef until well combined.
- Heat the oil in a large nonstick skillet set over medium heat.
- Add the mushroom beef mixture and all seasonings to hot pan.
- Cook for 10 minutes or until browned and the liquid has evaporated.
- Stir in the tomato sauce, brown sugar, vinegar, and Worcestershire sauce.
- Simmer for 10 minutes or until thickened.
- Use a food thermometer to ensure that all ground meat has reached a safe minimum internal temperature of 160 °F.
- Serve on rolls topped with coleslaw.
