Mushroom, Mozzarella and Cherry Tomato Pizza
The USDA MyPlate guidelines recommend making half of the plate fruits and vegetables. A classic family meal like pizza can still serve up health supporting nutrients. Preparation
- Place a large baking sheet, upside down, in the oven and preheat to 500 °F.
- Prepare pizza toppings: clean and dry mushrooms, mince garlic, halve grape tomatoes, and chop fresh oregano and basil, set aside.
- Heat oil in large skillet over medium-high heat.
- Add mushrooms, season with salt and pepper and cook until light golden-brown and tender, about 5 to 7 minutes.
- Transfer to a plate and set aside.
- On a lightly floured surface, press room temperature dough in a 10-inch circle.
- Transfer dough to parchment paper lined pan.
- Sprinkle mozzarella evenly over dough, leaving 1/2-inch border.
- Top with cooked mushroom and cherry tomatoes and garlic.
- Season with salt and pepper.
- Quickly slide pizza onto prepared baking sheet and bake until dough is golden-brown and cooked through and cheese is melted, about 10 to 13 minutes.
- Top with oregano and basil.
- Allow to cool for 5 minutes before slicing.
