Avocado Mexican Casserole

Avocado Crema Drizzle
Preparation
- Preheat the oven to 350°F degrees.
- In a large skillet on medium heat, warm avocado oil and add ground beef and diced onion.
- Brown beef until thoroughly cooked, use a food thermometer to ensure that all ground meat has reached a safe minimum internal temperature of 160 °F.
- Add taco seasoning and 1 to 2 tablespoons of water, stir until well combined, cook for an additional minute and remove from heat.
- In a 9x13 glass pan, add 1/3 of the marinara sauce.
- Evenly distribute half of the corn tortillas and top with 1/3 of the marinara sauce, 1 cup of shredded cheese, ground beef, tomatoes, and cilantro.
- Repeat this step. Cover the pan with foil and bake for 30 minutes.
- Remove foil and bake for another 10 minutes.
- In a medium bowl, add ½ avocado, sour cream, milk, cilantro, garlic powder and salt and pepper to taste.
- Whisk until smooth to form the avocado crema drizzle.
- Once the casserole has cooled, add the sliced avocado, and drizzle the avocado crema drizzle.
