Preparation
- Preheat oven to 350F degrees.
- Spray 13x9 casserole dish with Pam.
- Combine chicken broth, onion, and bell pepper in medium sauce pan.
- Cook until tender.
- Add mushrooms, milk, and cornstarch.
- Cook until it thickens and add jalapeños, garlic salt, and salt & pepper to taste.
- Add margarine and remove from heat.
- In casserole pan, layer tortillas, chicken, and sauce.
- Top with grated cheese and bake at 350 degrees for 30 minutes until hot through and bubbly.

"I don't like canned chicken so I used 3 chicken breasts and sliced them to paper thin then sort of chopped/shredded them. I didn't have any jalapenos so I used a can of chilis (I should have drained them) and instead of garlic salt I used powder. I skipped the mushrooms. With the peppers I would use red bell pepper next time to give some color place of green. It was very good that night but not good as leftovers, probably because of the chilis."

"I found this recipe to be lacking overall. The flavor was kind of single with the other ingredients getting overpowered by the chicken. I also found the dish to be too large making the overall casserole being about 1/2-1 inch thick. The casserole reminded me more of a pot pie with tortillas. It was good, but I don't think that I will make it again."
