This pineapple salsa is great with tortilla chips or as a topping for juicy grilled pork, chicken, tofu or seafood.
1 cup Fresh pineapple, Peeled and cored then Small Diced
1/2 cup Red bell pepper, Diced
1/2 cup Tomato, Diced
1 cup Frozen corn kernels, thawed
1 (15 ounce) can Food Club Black beans, drained and rinsed
1/4 cup Yellow Onion, Diced
2 each Jalapeño peppers, chopped
1/4 cup Orange juice
1/4 cup Fresh cilantro, chopped
1/2 teaspoon Ground cumin
As needed salt and pepper to taste
In a large bowl, toss together pineapple, red bell pepper, green bell pepper, corn, black beans, onions, jalapeño peppers, orange juice, and cilantro. Season with cumin, salt, and pepper. Cover, and chill in the refrigerator for at least one hour to allow the flavors to marinade.
