Pineapple Whip

This refreshingly creamy and fluffy dairy-free treat is so easy to make.

Ingredients:

1 fresh pineapple, peeled, cored and cubed
1 cup Coconut milk (or almond milk)

Directions:

Place pineapple chunks into freezer and allow to freeze overnight. Combine frozen chunks of pineapple and coconut milk into a food processor or high powered blender. Blend until creamy and smooth, scraping down the sides as needed. Transfer into chilled serving dishes and serve immediately.
