Preparation
- In a large bowl, combine cabbage, cucumber, onion, garlic, red pepper and carrot; set aside.
- In a small bowl, combine remaining ingredients; pour over vegetables andtoss to mix and coat.
- Chill in refreigerator, for about one hour, tossing once or twice.
- Yields 16 about 1/2 cup serving.

"I love a good cole slaw, and this one has some interesting veggies in it that I normally wouldn't add (which I liked!). The dressing is a bit on the sweet side, so if you don't love a sweeter slaw, I would suggest adding 1/2 of the suggested amount of sugar/honey/whatever you use as a sweetener. Some red pepper flakes spiced it up a bit if you're into heat. Thanks for the recipe!"
