Hawaiian Shrimp and Pineapple Tacos

Preparation

  • Soak skewers for at least an hour to prevent burning.
  • Cut in half and seed bell peppers.
  • Cut jalapeno in half and seed.
  • Peel onions and cut in quarters.
  • Chop cilantro.
  • Mix the pineapple juice and teriyaki sauce.
  • Skewer 8 shrimp at a time and brush with oil.
  • Brush vegetables with oil.
  • Grill shrimp, pineapple, and vegetables.
  • When the shrimp is cooked and pink, take off the grill and let rest, brush with teriyaki mixture.
  • Dice vegetables and pineapples, mix with reserved oil and cilantro seasoned with salt and pepper.
  • Heat flour tortillas on the grill until warmed.
  • emove shrimp and place 4 shrimp in each tortilla.
  • Place desired pineapple mix on each tortilla.
