Preparation
- Soak skewers for at least an hour to prevent burning.
- Cut in half and seed bell peppers.
- Cut jalapeno in half and seed.
- Peel onions and cut in quarters.
- Chop cilantro.
- Mix the pineapple juice and teriyaki sauce.
- Skewer 8 shrimp at a time and brush with oil.
- Brush vegetables with oil.
- Grill shrimp, pineapple, and vegetables.
- When the shrimp is cooked and pink, take off the grill and let rest, brush with teriyaki mixture.
- Dice vegetables and pineapples, mix with reserved oil and cilantro seasoned with salt and pepper.
- Heat flour tortillas on the grill until warmed.
- emove shrimp and place 4 shrimp in each tortilla.
- Place desired pineapple mix on each tortilla.
